In the choices of our menus we pay the utmost attention to the requests of each customer, whether they are intolerances, allergies or ethical-religious choices. In our premises at the Fair and for all catering services it is possible to find menus that offer culinary proposals aimed at celiac, intolerant / allergic, vegetarian and vegan consumers, but also ethnic products.

Clear
communication

All our bar and restaurants are equipped with allergen book. Each product displayed has its own label filled in with all details. Moreover the service staff is also able to provide more information related to them. The indication of allergens is also present on the Smart lunch platform: a platform of the Fiera Milano Group dedicated to the delivery and take away of catering products. In each location is exposed the Haccp manual and at Fiera Milano offices is available the general Haccp manual of the catering service of fieramilano.

Local, Seasonal, Organic
and Ethical Food

The gastronomic offer of the single catering formulas proposes raw materials at preferably Km 0 , in respect of the freshness and seasonality of the products, which guarantee to Fiera Milano to have that "added ingredient" in reaching the sustainability. The food supply is carefully selected by the Managers of the locations and catering services. We provide products of first quality, certified and meeting the legal requirements (national and EU) regarding the composition, packaging, transport, labelling, date of production and expiration date. Any operation needed for the performance of the service take into account the current legislation in the field of health hygiene (HACCP compliance).

Recycling and use of biodegradable products

Prevention and donation of food surplus during the event

Surplus food of catering services and local restaurants, in collaboration with bodies and associations such as charitable canteens and shelters, are donated to the most needy in the region

What does it mean to offer sustainable catering?

The production processes of each dish are designed to avoid waste and scraps. Choosing to use organic products, for example, allows us to use almost all parts of fruit and vegetables.

We choose a transparent supply chain, to obtain fresher and better quality products, trying to limit pollution and consumption.

Even the disposable tableware, used within the District, is sustainable: we only use compostable products.

At the end of each event, when it is not possible to deliver to the customer what has not been consumed, we donate what is left to charity and non-profit organizations that deal with the distribution of free meals.



Why should you choose a sustainable catering?

In addition to the safety of a completely artisanal and natural kitchen, choosing a Sustainable Catering is also advantageous from an economic point of view.

In fact, the greater attention to waste, the choice of a short supply chain and the use of seasonal products also affect production costs.

What does it mean to be a sustainable place?

Our suppliers are evolving more and more in this direction. We use selected food products that come from a controlled and transparent supply chain. We partly use energy coming from sustainable sources such as photovoltaic panels available to the district - following the joint venture agreement - fair renew - between Fondazione Fiera Milano and the company A2A Rinnovabili - and we use appropriate materials and detergents in the cleaning activities.
